That thar's a girly salad if ever I saw one.
It is beautiful.

There's salad: it has veggies in it.
Then there's fruit salad: it has sweet fruits, nuts, seeds, etc.

It's one or the other for me, but never the twain shall meet.

Dear Stuck in the Mud. It may be a girly salad, but the strawberries are strong enough to hold their own. And what vegetables, you say? These bits of lettuce and celery don't really compete against the mighty fruit but instead, work with the crunchy almonds to create a wholesome experience that would make any salad bowl proud.
I am really waxing poetic here, am I not....?

I'll have a more manly Italian salad that I'll post next time.
It has spaghetti and roast beef! What a pair!

That salad sounds yummy! But it's not going to happen in my house, unless I decide to "make and take" it somewhere, because no one in my house will eat all those things combined.

I do a simple strawberry spinach salad...if you want the recipe, come to my blog and let me know....I am always willing to share.

since you didn't include your email in your comment, I thought I'd come back and post my simple strawberry salad. Strawberries have to be my favorite fruit, so I'm always looking for recipes...I like your idea of a strawberry recipe meme!

Strawberry Spinach Salad

2 bunches of fresh spinach (or one bag washed baby spinach)
1 pint fresh strawberries (halved or sliced)

Dressing:

1/2 cup sugar
1/2 cup oil
1/4 cup vinegar (try red raspberry for something different!)
2 tablespoons sesame seeds
1 1/2 teaspoon minced onion (optional)
1/4 teaspoon Worcestershire sauce
1/4 teaspoon paprika

Mix dressing together, let stand before pouring on spinach. Immediately before serving, mix spinach and strawberries, then add dressing.

And here's one for the grill lovers:

Strawberry-Mustard BBQ Sauce

2 cups strawberries
1/2 cup Dijon mustard
1/4 cup ketchup
1/2 cup raspberry vinegar
1/2 cup loosely packed light brown sugar
1/2 cup molasses
1 teaspoon Worcestershire sauce
1/2 teaspoon ground ginger
1/2 teaspoon ground cumin


Clean the berries and slice them. Place all ingredients in a pot and simmer for 20

minutes. Let cool and transfer the ingredients to a blender or food processor; puree

till smooth, around 2 minutes. place mixture into a clean, dry container and chill

completely. Great for chicken, ribs or on mixed grilled vegetables. You can be store

this in the refrigerator for up to 1 week in a tightly closed container.

Yield: 1-1/2 cups

I never would have thought to put celery in with strawberries & mandarins..but it looks very pretty!
